Carol’s Mince-not-Meat
We’ve only been given the ingredients list but we reckon you can work out the rest!
8oz currents
80z sultanas
8oz raisins
8oz grated apple
4oz chopped mixed peel
2oz flaked almonds
4oz soft brown sugar
½ teaspn ground ginger
½ teaspn ground nutmeg
1 teaspn
mixed spice
grated rind and juice of one lemon
40z melted marg
4 table spns brandy or whisky
Pip’s Pie Pastry
8oz plain flour
4oz marg
2 oz soft brown sugar
rind of an orange
Enough orange juice to mix
Cinnamon to taste
Just make it like you do the normal boring stuff but use the orange juice instead of water or milk.
Christmas Mull
To make syrup
2 Oranges and 2 Lemons – juice and zest18 cloves and 3 cinnamon sticks bruised -you can use ground if you wish your mull will just be a bit grittier¼ nutmeg grated – as above8 oz sugar – I like to use rich dark muscavado but any will do1 pt water Put every thing in a steel or enamel pan and simmer for 30min. Cool, strain and store in the fridge until you need it, it will keep ‘for several weeks’ the book says.
To Use
Heat up 1 bottle of wine/carton of fruit juice (grape or apple seems to work particularly well) to approx ¼ pt of the syrup, alternatively just put a bloop (si unit) in a glass with wine /fruit juice and heat up in the microwave.
